In Real People Terms:
I do not use Google Adsense or Google Analytics. I rely on the Blogger Statistics inherently built into this site for information such page views and country of origin, among others. (If you live in Europe, you should get a GDPR compliant popup that Google added across all blogs further explaining this information.)
I employ the use of a few third party sites to help track and collect information. I use MailerLite to collect names and email address for my newsletters (I only deliver the specific emails you signed up for, you are free to unsubscribe at any time, and I do not sell or share my subscriber list). I am a member of the Amazon Affiliate program which helps me track click-buy conversion rates for visitors on my site. I run polls in my newsletter and on this Site through Pollmaker, and I run giveaways through Rafflecopter, both of which collect various forms of relevant information. I link to third party social media sites such as Facebook, Twitter, Tumblr, etc. Each of these sites have their own privacy policies when you leave my Site, but there is some additional information outlined in the sections below if you'd like to know more.
